韓式嫩豆腐鍋 Korean Spicy Tofu Stew 순두부찌개

昨天終於迎來了《#梨泰院class#ItaewonClass 大結局,韓劇中 #甜栗 🌰酒館老闆 #朴世路 的招牌菜 #嫩豆腐鍋 在最後一集中,也不忘再次出場!其實只要學會如何製作「湯底」,加入各種食材的嫩豆腐鍋,隨便怎麼煮都好喝啦!而且這款湯底,還能夠冷凍或冷藏保存,想吃嫩豆腐鍋的時候,再拿出來使用,非常方便快速!

食材:

水 1杯 (250ml)

魚乾 3~5隻

昆布 1小片

蛤蜊 8隻

櫛瓜 ½條

洋蔥 ¼顆

嫩豆腐 1盒

蔥花 1根

雞蛋 1顆


{湯底醬}

油 1大匙

豬絞肉 ½杯 (100g)

蒜 5瓣

青蔥 3根

韓式粗辣粉 ½杯

糖 1大匙

大醬 1大匙

醬油 1大匙

香油 1大匙


Ingredient:

1 Cup Water (250ml)

3~5 Korean Dried Anchovies (Dried Fish)

1 small piece Dashi Kombu (Dried Seaweed)

8 Clams

½ Zucchini

¼ Onion

Soft Tofu ½box

1 Green Onion

1 Egg


{Tofu Soup Base}

1 Tbsp Cooking Oil

½ Cup Ground Pork (100g)

5 Cloves Garlic

3 Green Onion

½ Cup Korean Red Chili Powder (Gochugaru)

1 Tbsp Sugar

1 Tbsp Korean Soybean Paste 

1 Tbsp Soy Sauce

1 Tbsp Sesame Oil


作法 Instructions


1. 先製作{湯底醬}的部分,將蒜、青蔥切碎。

1. Chop the garlic and Green Onion.


2. 在鍋中加入油,放入豬絞肉炒香。

2. Start to make {Tofu Soup Base}: Add oil to the pan and stir fry the ground pork.


3. 加入蒜末、蔥花一起拌炒。

3. Add minced garlic and green onion and stir fry.


4. 倒入辣椒粉、糖、醬油、香油,所有材料一起拌炒均勻,湯底就完成,可以裝在碗中放涼備用。(多餘的湯底也可以冷藏保存)。

4. Pour in chili powder, sugar, soy sauce, and sesame oil. Stir and fry all the ingredients together. The soup base is complete. You can put them in a bowl and let them cool. (Extra {Tofu Soup Base} can also be stored refrigerated).


5. 在鍋中加入1杯水,放入魚乾、昆布,熬煮10分鐘後將魚乾和昆布取出。

5. Add 1 cup of water to the pot, add dried fish and kumbu, and cook for 10 minutes and remove the dried fish and kumbu.


6. 蛤蜊 、櫛瓜、洋蔥絲、嫩豆腐全部放入石鍋中,加入熬好的高湯和湯底醬。

6. Clams, Zucchini, Onion, Soft Tofu are all put in the stone pot, and pour in the soup base to cook.


7. 等待湯煮滾後熄火,加入一顆雞蛋,灑上蔥花,就可以端上桌動囉!

7. Wait for the soup to boil and turn off. Add an egg, sprinkle with green onions and you can serve it on the table!
