比利時啤酒燉肉 Carbonnade Flamande (Belgium Beef and Beer Stew)

We all love a one-pot meal which offers great flavors with little mess. This Carbonnade Flamande, a traditional Belgian beef and beer stew, is made with a tasty twist by adding Bull-Head Shallot Sauce to complement the dish and balance flavors from all the components. Enjoy it with crusty bread or boiled potatoes!

比利時啤酒燉肉


食材


麵粉 35g (1/4杯)

牛肉塊 680g (1.5磅)

黑胡椒 1/2茶匙

鹽巴 2茶匙

蘑菇 225g (8oz)

洋蔥 2顆

紅蘿蔔 2根

油 2大匙

蒜末 2大匙

紅糖 2大匙

月桂葉 2片

小茴香 1茶匙

百里香 1茶匙

肉桂粉 1/2茶匙

丁香粉 1/2茶匙

牛頭牌紅蔥醬 1大匙

牛肉高湯 235ml (1杯)

比利時啤酒 355ml (12oz)


Ingredients


1/4 cup Flour (35g)

1.5 lbs Beef Chunks (680g)

1/2 tsp Black Pepper

2 tsp Salt

8 oz Mushroom (225g)

2 Onions

2 Carrots

2 Tbsp Cooking Oil

2 Tbsp Minced Garlic

2 Tbsp Brown Sugar

2 Bay Leaves

1 tsp Fennel Seeds

1 tsp Thyme

1/2 tsp Ground Cinnamon

1/2 tsp Ground Cloves

1 Tbsp Bullhead Shallot Sauce

1 cup Beef Broth (235ml)

12oz Belgian Beer (355ml)


作法 Instructions


1.將牛肉塊放入盆中,加入麵粉、黑胡椒、鹽巴,輕輕翻拌,使牛肉可以均勻裹上麵粉

1. Put the beef cubes in a mixing bowl, add flour, black pepper and salt, and gently mix to make the beef evenly coated with flour.



2.蘑菇、洋蔥切片,紅蘿蔔切塊。

2. Slice mushrooms, onions and cut carrots.



3.倒入油,將牛肉放入鍋中(壓力鍋用Saute煎炒模式),兩面煎至金黃色後取出。

3. Add beef in the Stew-pot ("Saute" mode for Instant Pot), saute until golden brown and take out.



4.將蘑菇、洋蔥、紅蘿蔔放入鍋中(壓力鍋用Saute煎炒模式),拌炒5分鐘。

4. Add mushrooms, onions and carrots into the Stewpot ("Saute" mode for Instant Pot) and saute for 5 minutes.



5.牛肉塊放回鍋中,加入蒜末、紅糖。

5. Put the beef back into the pot, add minced garlic and brown sugar.



6.放入香料(月桂葉、小茴香、百里香、肉桂粉、丁香粉)和牛頭牌紅蔥醬。

6. Add spices (Bay Leaves, Fennel Seeds, Thyme, Ground Cinnamon, Ground Cloves) and Bullhead Shallot Sauce.




7.倒入牛肉高湯和啤酒。

7. Pour beef broth and Belgian beer.



8.蓋上鍋蓋後,以中小火燉煮40分鐘。(壓力鍋用Stew燉煮模式)

8. Cover the lid and simmer for 40 minutes on medium-low heat. ("Stew" mode for Instant Pot)



9.燉煮完成後 (將壓力鍋洩氣),盛盤和裝飾後就可以配麵包一起吃囉!

9. After the stew is completed (Quick Pressure Release for Instant Pot), after you plate it, you can eat it with baguette after serving with seasoning.
